There is something intrinsically unbalanced in editing a paper, but hey, in the name of loyalty to the title, I’ve given it a shot. What I hope this paper does is give you a measured insight into some important themes in food as well as the industry we enthusiastically inhabit. I hope it also encourages you to enjoy yourself – and to make the most of a food and restaurant culture in rude health. I’d like to thank Hoi Polloi – particularly Pablo, David, Penny and Ylva – for the opportunity to publish a journal alongside a healthy selection from their summer menu. And also Rosy and Sara for the wonderful way in which they have realised the theme.
